Orange Salad with Palm Oil

ORANGE SALAD WITH PALM OIL

Perfect for packed lunches; make it as light as you like with extra herb leaves, or add more potatoes if you prefer something heavier. Citrus flavours and capers add extra zest, perfectly complementing the creamy milkiness of the buffalo mozzarella.

INGREDIENTS:
2 potatoes, cut in wedges, then boiled and pan roasted
some frisee leaves· some rocket leaves
2 slices smoked salmon
1 piece buffalo mozzarella, sliced • a few capers


FOR DRESSING
juice of 2 oranges· juice of 1 lemon
3 tbsp white clover honey. 30 g palm oil
1 tsp sea salt • 1 tsp black pepper

METHOD:
1. Toss potatoes, frisee. rocket. salmon, mozzarella and capers together.
2. To make dressing, blend all ingredients together until emulsified. Drizzle over salad.
3. Serve immediately.
